Defender Philippe Senderos headed home Arsenal's second goal just two minutes later.
There was no stopping in-form Henry, who scored his second goal on the counter-attack before sealing his hat-trick and record-equalling goal in the 68th minute.
Arsenal fans were given more to cheer about when defender Ashley Cole came on as a 35th-minute substitute, making his first appearance since breaking a bone in his foot against Birmingham City on 2 October 2005.
Robert Pires and Gilberto Silva also scored either side of half-time, with a chip over goalkeeper Brad Jones and a header from an Henry free-kick respectively.
Things then went from bad to worse for Boro, as central midfielder Doriva received a second yellow card for pulling hat-trick hero Henry back by his shirt.
By that point, Wenger's side were cooking on gas and it wasn't long until Alexander Hleb scored his first goal for the club with a tap-in to seal the 7-0 win.
Speaking after the match, Wenger said: "We played our game and the goals came as a consequence of our quality. Of course Thierry scored three - everybody nearly scored!"
